Regional Food Atlas Putting Local Food on the Map ![]() A key local priority is to educate consumers on the importance of local food production --for health, for economics, to protect local farms and open space, and as a key component of future food security -- not only contamination but shortages of water supply and costs of future transportation systems. In an effort to develop an attractive summary of the history, future, and potential of local food systems WSU Jefferson County Extension is interested in working with its community partners to develop a FOOD SYSTEM Atlas that can then be followed up in subsequent years with a STATE OF OUR FOOD report that will track the growth of local food production and purchase, the transition of farm land, and the growth of a new local food economy.
