Oregon State University has produced a number of crop enterprise budgets for organic systems in the past year or so.  Many are listed at the North Willamette REC web page: http://oregonstate.edu/dept/NWREC/ag_econ/ent_budget_cost.cfm

These include budget and information sheets on leaf lettuce, radish, and spinach.  There are also older budgets on organic sweet corn, bush bean, broccoli, cauliflower, carrots, cucumber, and beets.
